We are one of a small group of chocolate makers in North America making Bean to Bar chocolate. We source organic, fair trade and ethically sourced beans from all over the world to make our single origin bars. Each bar is unique and has a flavour profile connected to the origin of the beans.
We use our chocolate to create our other unique products.
and yes we also make flavoured marshmallows, because we are all a kid inside.
Tim Simpson and Aura Hertzog met in cooking school in the fall of 1999. Their experience in the food industry is vast and includes everything from high end hotels, large scale restaurants, small pastry shops, farmer’s markets, international supermarkets and catering companies. This is the second bakery business for them. Ambrosia is a chocolate maker, a wholesaler, and a retail store front.
